EXPO Milano 2015 | How-to make a Lamington

Visitors to the Etihad Airways and Alitalia Pavilion were taught how to make a Lamington by Inflight Chef Ioannis. Lamington’s are served in First Class on Etihad Airways flights from Sydney, Australia to Abu Dhabi.

Ingredients (for 24 servings)

Cake:
2 cups all-purpose flour
4 teaspoons baking powder
1/8 teaspoon salt
1/2 cup butter, room temperature
3/4 cup white sugar
1 teaspoon vanilla extract
2 eggs, room temperature
1/2 cup milk

Icing:
4 cups confectioners' sugar, sifted
1/3 cup cocoa powder, sifted
2 tablespoons butter, melted
1/2 cup warm milk
1 pound unsweetened dried coconut
