Italian chef, Davide Oldani visited the Etihad Airways and Alitalia Pavilion at EXPO Milano and taught visitors how to make ‘Saffron Risotto’ or ‘Risotto Milanese’ - a signature Milanese dish and one he created especially for EXPO 2015.

INGREDIENTS : (Serves 4)
For the rice:
320g Carnaroli rice
160g unsalted butter
80g grated Grana Padano cheese
1 ½ Liter hot, salted water
10ml white wine vinegar
Salt

For the saffron sauce:
100 ml water
1g saffron pistils
1g salt
5g cornstarch diluted in 22 ml cold water
