*** FULL INGREDIENTS LIST AND METHOD BELOW ***

Ingredients:

Samosa dough slices

Stuffing:

1 cup chickpeas, boiled
1 cup dried split chickpeas, boiled
2 onions, finely chopped
Salt and black pepper (to taste)
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1 tablespoon Bzar (Emirati spice blend)
1 teaspoon tomato paste
Ground dried lemon

To seal the samosa slices:

3 tablespoons flour + 2 tablespoons water


Preparation:

1. Sauté onions in some oil, then add ground cinnamon, salt and other spices. Add the tomato paste after diluting it with water.

2. Add the sliced and whole chickpeas and heat for a few minutes.

3. Take the stuffing off the stove and set it aside to cool.

4. Fold the samosa slices as funnels, then fill with stuffing.

5. Fold the samosa pieces into triangles and seal with adhesive (flour and water mixture).

6. Fry samosa pieces on medium heat in oil or using an air fryer.


Cactus Sauce (Tamarind)

Ingredients:
½ cup tamarind paste
1 – 1½ cups hot water
Salt (to taste)
Pinch of ground cumin
Pinch of sugar


Preparation:

1. Soak tamarind in hot water, then strain using a colander.

2. Mix tamarind with salt and spices and serve as dip with samosa.

Note: You may add minced or mashed vegetables to the samosa stuffing.
